On any given morning in the Higgins household, there’s about a 50% chance that my husband Jason is going to eat an everything bagel for breakfast. Not even kidding y’all, he LOVES his damn bagels in a way that I frankly have a hard time understanding. Don’t get me wrong; I love a good bagel too but it’s just not something I would think to eat everyday. Personally, I’m more of a protein shake or omelette kind of gal myself but that’s just me.
This November when I was prepping to send him on his annual deer camp trek, I wanted to make him something homemade to snack on and I knew I had to find a way to incorporate the everything bagel in some way, shape or form. It’s here that the idea for mini everything bagel dogs was born! OH.EM.GEE. y’all…not to toot my own horn and all but I can almost guarantee you won’t even believe how delicious these actually are until you try them. I’m pretty sure I ate like half of them myself standing over the stove before they were cool enough to put away so yeah…they’re delish. They’re also super quick and easy to put together to boot which is ALWAYS a plus in my book.
1. Preheat oven to 350 degrees. Open crescent roll tube and gently roll out the dough onto a cutting board. There will be 8 small triangle-shaped crescent rolls, each of which you’ll cut into 3 pieces. I used a pizza cutter to make quick work of this though obviously a knife would also work.
2. Take one of the triangle thirds you just cut and lay a Lil’ Smoky link on top of it about 1/2 inch from the long skinny end of the dough. Wrap the end of the dough around the sausage link and roll all the way to the end, pinching the dough around the sausage at the end to secure.
3. After you’ve finished rolling all the Lil’ Smokies in the dough, place them all on a baking sheet. Scramble your egg to make an egg wash and use a small culinary brush to brush each piece of dough with the egg. This will not only help the toppings to stick but will also give the dough a nice toasted exterior.
4. Sprinkle with your choice of everything bagel toppings to taste. My hubby happens to LOVE poppy seeds so I went especially heavy on those.
5. Bake for 10-15 minutes until golden brown.
